Calalloo - The Recepie

Every Sunday as a rule we cook calalloo as part of our Sunday meal, I blogged about this before I just thought I will share the recipe amongmy good friend Donna and the HORDES of okra lovers here in blogland lol!!

Calalloo

1 Bundle Calalloo Bush (12 stalks calalloo leaves) (Check your West Indian Markets)

1/4 lb salted beef or pork or smoked meat of your choice

10 Okras


1/2 lb pumpkin

1 med onion

3 sprigs chive

2 tbsp celery

5 heads garlic

1 tbsp crushed ginger

1/2 green bell pepper

2 cup coconut cream/milk

2 cups water

2tbsp cooking margarine/butter

salt

black pepper

1tsp sugar

1 tsp salt


Directions
Wash and cut leaves and the stalk too (cut of appox 3-4 inches off from the end and dump the ends)

Soak, boil and cut up salted or smoked meat of your choice

In a heavy saucepan, (not yet on the stove) place garlic and ginger, then add chopped calalloo bush, salted meat, add chopped okras and chopped pumpkin add 2 cups water and coconut cream, cover and set on stove to boil, then allow to simmer stirring occasionally for approx 20 - 25mins.

Add seasonings (chive celery, onions and green pepper), after a further 10 mins add dry seasonings including sugar. Cook for another 5 minutes, add cooking butter, all ingredients in calalloo should be soft and well cooked!

Allow to cool enough to blend or 'swizzle' (REMEMBER TO REMOVE MEATS FIRST)
After blending taste, again and add more salt if needed!

Sounds so good... I love OKRA and if I ever find a West Indian Market I am going to give it try... It looks so yummy... Maybe when I get back home in just 11 days...

Huh, my blog isn't gone?
Love this recipe. I think it's nice that you have a Sunday routine dinner. I've put coconut milk in collards, which is so close to this green. And okras are the best ever veggie on the planet. Well, maybe right behind cauliflower. Best yet, let's mix up some cauliflower, okra, corn, onion, and a little garlic. Nothings right without a little garlic.

Er Raxx, I'm really sorry but that picture at the top does nothing for me. I'm sure it's one of those tastes much better than it looks recipes but there is no way my kids would eat that.

I'm glad we don't have an abundance of Callaloo Bushes here in Northumberland!

Nice to meet you! I have never tasted Okra. It looks very interesting. It sure has a lot of seasoning in it, which sounds very good. Most of the bloggers I read are from the south and the food sometimes seems a little different but I am game. This dish diffinately would be healthier then what I normally fix. I need to try it. Hi Raxx, I wish you could send me some in the mail to try, because as you know I hate to cook! So I'm always looking for something that almost has almost no prepare time at all. This recipe will take too long *for me* but, I love okra and pumpkin.

Hey, I see that pumpkin is one of the ingredients of this. Do you use fresh pumpkin?
My nephew lives in Japan and said that one of the things that he misses most is pumpkin pie. I found him a piece of pumpkin pie while we were in hawaii!
